Maot’sai Restaurant M 米特区的冒菜店
At the northern end of Friedrichstrasse, at the intersection with Oranienburger Strasse, the first Berlin branch of “Sanku Maot’sai” is hard to miss on the busy street with its bright yellow and black signs.
“三顾冒菜”柏林首店位于费德里希大街北端与奥拉宁堡大街交叉的路口处,黄底黑字的明亮招牌呼应着热闹街头来来往往的黄色街车,任何路过这里的人都很难不注意到它的存在。
Maot’sai comes from southwestern China. It is a popular street food where diners can choose their own fresh ingredients, just like at a market, and then have them cooked and seasoned – conveniently and quickly. Nowadays, it is especially popular among the younger generation because the variety of ingredients allows for a balanced mix. The “Sanku Maot’sai” brand is on the rise in China and is also trying to gain a foothold abroad. When the restaurant came to Berlin, we as designers wanted to enhance the chain’s image with a simpler, more modern design that also breaks away from the stereotypes of traditional Chinese restaurants overseas.
冒菜起源于中国西南地区,是一种广受青睐的街头食品。食客们可以像在市场上一样自行挑选新鲜食材,交给店家烫煮调味,方便而快捷。如今更因为食材丰富,能够均衡搭配,烹饪过程健康受到年轻一代欢迎。 “三顾冒菜”品牌连锁店在中国本土迅速扩张,也尝试开拓海外市场。落地柏林时,我们希望通过更柏林、更简单、更现代的设计,既能对本土连锁店形象加以升级,还可以打破传统海外中餐馆带给人们的刻板印象。
The heart of the restaurant is the counter with almost 100 different kinds of fresh vegetables, soy products, meat and seafood, which not only looks very attractive, but also represents a new dining experience for Western guests. We installed 10-meter-long refrigerated display cases that visually attract guests as soon as they enter the restaurant. The cash register, serving counters, and condiment stations are connected to the refrigerated display cases in a flowing sequence, using a simple and consistent design language, so that even guests eating Maot’s sai for the first time can understand the process at a glance.
设计的第一步是对功能的梳理和布局。冒菜的核心是选菜区,接近100种新鲜的蔬菜、豆制品、肉类和鱼虾陈列在一起供人选择,不仅非常吸引人,对西方的顾客来说也是一种全新的就餐体验。我们把长达10米的选菜冷柜一字排开,放在餐厅最核心的区域,人们一进入餐厅就会被震撼的视觉效果吸引过来。柜台、出餐台和调料台按操作顺序与冷柜连成一线,形成流畅的序列,高度一致的柜体造型简单而醒目,让第一次来的顾客也能一目了然地搞清楚吃冒菜的流程。
In addition to the counters and display cases, a series of dining areas have been created with different arrangements and atmospheres: A raised area as a hidden seating island built around the stairs, a casual bench combined with a small garden in the entrance area, two high bar tables under the window for guests who want to eat alone, and “normal” tables that can be freely arranged in the most spacious area. Guests can choose where they feel most comfortable to enjoy their maot’sai.
在选菜区域的周围,我们充分利用现有空间,设计了一系列氛围迥异的就餐“小环境”:围绕在楼梯周围抬高的温馨岛屿、入口区域结合绿植的休闲座位、窗下的一人食吧台、最宽敞的空间区域可以自由排列组合的“常规”桌椅。客人们可以挑选自己感到最舒适的位置享用美食。
“Low budget” was an important keyword in the concept. Not only for economic reasons – the risk of opening the first restaurant for an unknown dish from a distant country is obvious – but also in response to the desired “Berlin style”. We want to install as little as possible: Walls and ceilings will remain raw. We use inexpensive, environmentally friendly materials such as linoleum floors and plywood for the fixed furniture, and the simple, geometric design language we use gives the design a clear look while helping us save on material costs.
“低成本”是设计很重要的一个关键词。不仅是出于商业考虑——为了一种来自遥远国家的陌生食物开出的第一家餐厅,风险是不言而喻的——也是设计师对“柏林精神”的响应。最低限度的“装修”:裸露的墙面和顶面;低造价的环保材料:亚麻胶铺贴的地面和海洋板做的固定家具;简单清晰的形式语言:基础的几何体块看上去干净利落的同时也节约材料成本。
“Low budget does not mean looking cheap. We want to create an urban atmosphere despite the simple design. We extracted the two primary colors, yellow and black, from the brand’s colorful VI system and used them to define different functional areas. Fluorescent tubes line the room, and neon lights add a hip touch to the space. We hung a bright yellow rope net around the staircase so that customers can lean back and chat comfortably. The custom-made stainless-steel table and used Arne Jacobsen chairs from eBay also add a relaxed Berlin touch.
“低成本”并不意味着简陋。我们希望通过简单的设计将明晰和明快的调子带到空间中。从品牌五颜六色的VI系统中,我们提炼出黄黑两个基础色,以大而鲜明的色块定义不同的空间元素,并用柔和的暖灰调和黄黑色块强烈的对比关系;廉价的材料也可以是有趣的:日光灯管勾勒出空间的轮廓;霓虹灯烘托出市井的氛围;明黄色的绳网取代了楼梯的玻璃护栏,顾客们可以靠在上面聊天;自己设计的不锈钢桌子和ebay上淘来的二手Arne Jacobsen椅子也相映成趣,很柏林。
